But in developed countries like US, Japan, and other countries the term 'organic' is precisely defined by the government and there are certain rules prescribed regarding the quantity of production. No individual can use this term unless it satisfies the defined criteria.

There are two broad categories of organic food.

1. Fresh food

2. Processed food.

Fresh organic foods are produced without any involvement of artificial chemicals such as fertilizers, pesticides, antibiotics etc. and are usually the products of farming. They are highly perishable in nature and are not available in all the seasons.

Eating the right food to lose weight is one thing but just as important is eating the right food to keep you healthy. Sure you'll feel fitter when you lose weight but that doesn't mean you are healthy or that your body is functioning properly. We live in the age of processed food which is not good for you. Nearly everything you see in a food store nowadays is processed stuff. The makers have played around with the original so much and added so many preservatives, flavours, artificial tastes and colourings to it that it's a wonder it can be classified as food. That includes those frozen and takeaway meals too Sometimes I think food manufacturers are more occupied with the colourful packaging than the contents. After all, they're in it for the money.

But we should eat to be healthy. No matter how much you might like it, the processed stuff is not good for you. You need to think fresh food - fresh meat, vegetables and fruit. It's still around. You can still buy it. And it's  the real thing. People have been living on it since civilisation began.

The Prince of Wales has recently reopened a can of worms that had laid relatively dormant for almost a decade. It is of course is the debate of genetically modified crops against natural fresh foods. The king in waiting recently made comments to a journalist that were recorded in which he delivered a scathing attack on GM foods, saying that it could be one of the greatest natural catastrophes of all time.

The regent favours fresh foods from natural crops and claims that GM foods are pushing out small producers whilst destroying soil and polluting water. It is claimed that GM foods are the answer to world hunger as they can be designed to withstand more severe conditions and more resilient to strong fertilisers or pesticides. The Prince does not agree and claims that it is all a ruse to industrialise the farming of fresh foods.

The Adventure of Fresh Food

I have always looked at food as something you eat when you are hungry or eat to satisfy a craving(pasta, cookies, waffles, etc.). I also have equated it with holidays, romance, and friendship. It has only been since moving to the country and living in the middle of a fresh farm food mecca have I come to regard food as a means of expressing creativity, health, deep community, and unbounded joy.

I watch in wonder every year as apricots and tomatoes magically appear and weigh down branches and vines with their gifts. A silent prayer rises from my heart in wonder at how much grows out of tiny seeds and how deep and rich the flavors are. I am a city girl-fairly new to this existence. It is becoming obvious that real food is better, healthier, more magical, and more fun to pick, eat, and store than grocery store food.

 It is Sunday afternoon in Notting Hill, well past brunch, yet a line has formed outside Ottolenghi, a deli-patisserie. My teenager, eager to visit the nearby Portobello Road flea market, wants to give the shop a pass until her eyes fix on the window display.

Fresh and never refrigerated

Meringues, the sizes of grapefruits and swirled with chocolate, are stacked precariously on a tall stand. Underneath, on a white table, are platters of strawberry and white chocolate ganache tarts, blackberry and vanilla cupcakes, cherry cheesecake, almond Florence teacakes, and more. The food display inside Ottolenghi is only moderately less sumptuous.

A long white table is adorned with quiches, salads, and vegetable and meat platters garnished with spicy pecans, pickled lemons, feta, and saffron or pumpkin seeds. The menu is on a blackboard. There is no refrigerator in sight.
